ingredients:
4 standard-sized cans of black beans
1/2 yellow onion
6 cloves of garlic
1 bunch of cilantro
8 oz of shredded Monterey Jack cheese
2 cups of whole grain brown rice
2 avocados
1 can salsa
1 cup sour cream
1 bag of tortilla chips
directions:
heat black beans in a pot over 325 degrees, keeping most of the juice. Chop onion and cilantro, mince garlic, and place all in a saucepan and sauté. After beans have heated for 20 minutes, add sautéed ingredients and stir into black beans. In a separate pot, begin preparing brown rice (follow rice instructions on bag). Pour black bean concoction into a 13×9 inch pan and add shredded cheese on top, covering extensively. Cover with foil paper and bake for 30 minutes. Serve black bean entrée over the brown rice, having a nice spread of chips, slices of avocado, salsa, extra shredded cheese, and sour cream as toppings.
My Bible study group decided that we would take turns making dinner for our group each Monday night. We are being very legalistic and cooking exactly what that week’s menu calls for.
I was assigned the session 1 menu to prepare. I must admit that when I pulled it out of the oven I said, “Yuck!!” My group had similar reacts when they saw it (and bear in mind this group will eat almost anything!). HOWEVER, it was delicious! After we started eating all you could hear was forks clinking on the plates (highly unusual for us to be quiet).

Last week was our first meeting and our Dear Kathie made this for us and hosted us in her home. The aroma was amazing but didn’t compare to the taste! We ate it on Monday and I craved it again all week so I am making it for my family tonight.
If all of the recipes are this good, it is going to be very challenging to not gain weight! LOL!

Kim, you’re right. It looks GROSS! But it tastes awesome. I made it while babysitting and the kids (and I) loved it.
